What the food safety danger zone actually means

USDA FSIS defines the "danger zone" as 40°F to 140°F (roughly 4°C to 60°C), the temperature range where bacteria multiply fastest on perishable food. Food should not sit in that range for more than 2 hours — or more than 1 hour if the air temperature is above 90°F (32°C), which covers most outdoor summer potlucks and barbecues. After that window, USDA FSIS says to discard the food, even if it looks, smells and tastes fine, because the bacteria that cause food poisoning don't change any of those things.

Why 40°F to 140°F specifically

Bacteria that cause food poisoning grow slowly when food is properly chilled (at or below 40°F/4°C) or kept properly hot (at or above 140°F/60°C). Between those two points, growth speeds up — and above roughly 90°F (32°C) ambient air temperature, it speeds up further, which is why USDA FSIS shortens the safe window to 1 hour rather than 2 once it's genuinely hot outside. This is the same range and logic behind how long leftovers last in the fridge: once food has been properly refrigerated, USDA FSIS gives it 3 to 4 more days before the clock runs out again.

Frequently asked questions

Does the 2-hour rule reset if I put food back in the fridge and take it out again?

No. USDA FSIS counts cumulative time in the danger zone, not time since it was last out. If a dish has already been out for an hour at one point in the day, it only has one hour of safe time left the next time it's served.

What foods does the danger zone rule apply to?

Perishable food generally — meat, poultry, seafood, eggs, dairy, cooked grains and rice, cut fruit, and dishes containing any of these. Shelf-stable items like whole uncut fruit, chips or unopened jarred sauces aren't covered by the same clock.

How do I keep a potluck table safe without a thermometer in every dish?

Set a timer from when the food is served, not when you think of it. Keep hot dishes above 140°F with a slow cooker or warming tray, keep cold dishes on ice, and move anything approaching 2 hours (or 1 hour outdoors in the heat) off the table.
